My glove box lid caught fire during a brunch rush
I was on saute in Portland last Saturday, a pan flared up and I grabbed what I thought was a dry towel, but it was a cloth with oil on it, went straight up. I killed it with the lid, turned down the heat, and finished the order, but now I keep a metal sheet tray within reach for any flare. Anyone else keep a specific fire tool near their station besides the extinguisher?

Sheet trays beat towels for flare ups every time. A towel can still carry grease even if it looks clean, but that metal just smothers and stays put. I also keep a spray bottle of water nearby for backup, though you have to be careful with oil fires.
