My walk-in was running 12 degrees warm until I moved the thermometer off the door frame
Spent a week chasing temp problems and swapping out product before I realized the probe was sitting in the draft every time someone walked in. Stuck it on the back wall at eye level and suddenly the reading matched my handheld within a degree. Anyone else find their gauge was lying to them the whole time?
The "probe was sitting in the draft" thing is real, but moving it to the back wall at eye level could bite you later. Warm air rises, so eye level runs a bit warmer than the bottom of your walk-in where your product actually sits, and now you might be reading high instead of low. I'd drop that probe down to the middle or lower section and test it against your handheld right next to the product before trusting it.
