Ugh, that reminds me of the time I tried to make gravy for ten people and somehow ended up with wallpaper paste. The panic of guests arriving just makes everything in the kitchen go wrong (it's a universal law, I swear). We ended up ordering pizza and laughing about it.

Everyone freaks out about smooth sauce but a split hollandaise still tastes great. You can usually whisk in some hot water to bring it back quick. Not worth stressing over during a busy brunch.
