Sticking to my guns on veal paid off last night

A regular at our place asked for veal scallopini, which we stopped serving years ago. I know some farms don't treat the animals well, and that doesn't sit right with me. For a second, I thought about making an exception because he's a good customer. But I explained we use pork and chicken from local farms we trust. He got quiet and seemed upset, so I offered to make something special with lamb instead. He agreed, and we cooked a dish with herbs from our garden. After eating, he said it was the best meal he'd had in weeks. It felt like a win to keep our standards and still make him happy.

W move. The lamb with garden herbs sounds fire. Sticking to your guns on veal shows you stand by what you believe. It's cool how you turned a tough spot into a win for both your values and the customer. More places should have that kind of backbone. Glad it worked out.
