The diner cook in Barstow flipped 41 eggs in 3 minutes and I just stood there with my mouth open
Stopped at a little truck stop diner off I-15 in Barstow last Tuesday and the line cook had this insane setup with 4 burners going at once. He wasn't even looking at the eggs, just listening to the sizzle and flipping by sound while yelling orders back to the waitress. I've been on the line for 9 years and this guy made me feel like a total rookie. Any of you ever picked up a trick just from watching someone in a random roadside spot?
41 eggs in 3 minutes means he's basically a human spatula at that point. The part that gets me is flipping by sound, like the eggs are talking to him and he's just nodding along. I worked a grill for years and still can't hear a egg tell me when it's ready.
