Took me about 3 years to realize I was over-working my pie dough
I always wondered why my crusts came out tough, then I watched a guy at a diner in Portland barely mix his butter in and it clicked. Has anyone else had that moment where you watch someone do it simpler and feel dumb?

Wait, is tough pie crust really that big of a deal though? My grandma always overworked hers and nobody ever complained.
