Why does nobody talk about the ticket rail as a teaching tool
A line cook at a spot in Austin showed me how he reads the rail to spot a dying station before the chef does, and it clicked for me after 12 years on the line. Now I watch tickets pile up in one spot and know who needs a hand, does anyone else use the rail that way or is it just me?
Watching the rail tells you who's in the weeds, sure, but it lags behind what's actually happening on the line. Honestly by the time tickets stack up the station's already drowning, so I'd rather just glance at the cook than the paper.
